Toasted Sesame Umami Vinaigrette

 

This soy sauce and tahini salad dressing combines the rich, nutty flavor of tahini with the umami depth of jozo soy sauce, creating a creamy and delicious dressing that's perfect for a variety of salads.

Ingredients:

  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons tahini
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon mustard 
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2-3 tablespoons water 

Instructions:

  1. Combine Ingredients: In a small bowl or a jar with a tight-fitting lid, combine the soy sauce, rice vinegar, tahini, sesame oil, olive oil, honey (or maple syrup), minced garlic, grated ginger, and mustard.
  2. Mix Well: Whisk the ingredients together until well combined and smooth. If using a jar, secure the lid and shake vigorously until the dressing is emulsified and creamy.
  3. Adjust Consistency: If the dressing is too thick, add water one tablespoon at a time until you reach your desired consistency. Whisk or shake well after each addition.
  4. Taste and Adjust: Taste the dressing and adjust the seasoning as needed. You can add more honey for sweetness, more vinegar for tanginess, or more soy sauce for saltiness.
